15 Minute Coconut Rice

Confession. I am a rice lover.

In fact, I've been known to make rice with almost every single meal for as long as a week.

There is white rice, brown rice, basmati rice, jasmine rice, black rice, and the list goes on.

But this rice?

This rice is an absolute favorite in our house, and is quite often requested by my 10 year old daughter.

Coconut Rice.

This rice is guaranteed to take your dinner up a notch (or 2, or 3), and WOW your family and friends.

Did I mention that it’s quick, easy AND can be made in about 15 minutes?

It’s true!

Coconut Rice

1 TBSP coconut oil

1 cup coconut milk (full or reduced fat)

1 cup Basmati rice

1 cup water

*Melt 1 TBSP coconut oil in saucepan over low heat.

*Add rice to pan, using spoon to mix well. Make sure the rice is covered with the oil.

*On medium low (no. 4 on stove), let the rice sit for about 30-45 seconds to toast

*Add the water and liquid, stir to combine

*Raise the temperature to boiling. Once rice is boiling, lower to low heat (no. 2 on stove), cover with lid for 10 minutes.

*Fluff with fork and enjoy!
